Prawn Salad with Thai
Sweet Chilli Dressing

Ingredients

•• 250 g cooked king prawns

•• 1/3 cucumber, cut into half-moon shape

•• 1 papaya, cut into small slivers

•• Coriander for garnish

•• Peanuts, chopped and fried for garnish

dressing

•• 1 ½ Tbsp  Lee Kum Kee Thai Sweet Chilli Sauce

•• 3 Tbsp lime Juice

•• 2 Tbsp sugar

•• 1 Tbsp fish sauce

•• 1 stem lemon grass, finely chopped

 

Method

  1. Mix prawns, papaya and dressing in a bowl. Cover and refrigerate for 1 hour.
  2. Sprinkle with coriander and chopped fried peanuts. Serve cold.

tips

•• Cantaloupe melon is an alternative to papaya. Kings prawn can be replaced by chicken
     breast or pressed tofu/hard tofu for vegetarian choice.
